Ingredients
- 2 large eggs
- 2 slices of turkey bacon
- ½ avocado, sliced
- 1 CUP spinach (optional for added greens)
- 1 TBSP olive oil or avocado oil
- Salt and pepper, to taste
- Optional toppings: fresh herbs (like cilantro or parsley), red pepper flakes for a kick
Instructions:
- Cook the Turkey Bacon: In a skillet over medium heat, add the turkey bacon and cook until crispy, about 3-4 minutes per side. Remove from the pan and set aside.
- Cook the Eggs: Add the olive oil or avocado oil to the pan. Crack the eggs into the skillet and cook to your liking
- Season with salt and pepper.
- Assemble: Slice the avocado and arrange it on a plate. Add the eggs, turkey bacon, and sautéed spinach.
