Watercress Salad

Ingredients:

  • 2-3 large hardboiled egg
  • 2 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • ¼ tsp pepper
  • 1/8 tsp coriander
  • 2 tsp olive oil
  • ½ tsp salt
  • pinch of smoked paprika
  • 1 bunch of watercress

Directions:

Mix lemon juice, mustard, pepper, coriander, olive oil, salt, and paprika for dressing.  Boil water to steam watercress.  Place watercress in colander over boiling water and steam for 2-3 minutes or until gently wilted. Serve immediately and top with egg and dressing.
