Ingredients:
- 2 medium zucchinis (spiralized into noodles or sliced thinly)
- 1 ripe avocado
- 1/4 CUP fresh basil leaves
- 1 TBSP lemon juice
- 1 small garlic clove
- 2 TBSP extra virgin olive oil
- Salt and pepper, to taste
- 1/4 CUP pine nuts (or walnuts)
- Optional: Cherry tomatoes for garnish
Instructions:
- Use a spiralizer or a vegetable peeler to create zucchini noodles. If you don’t have a spiralizer, you can also slice the zucchini thinly into strips. Set aside.
- In a blender or food processor, combine ingredients. Blend until smooth, adding more olive oil if necessary to reach your desired pesto consistency. Season with salt and pepper to taste.
- Toss the zucchini noodles with the avocado pesto until well-coated.
- Garnish with cherry tomatoes, extra pine nuts, or fresh basil, if desired.
- Serve immediately and enjoy!
