Zucchini Noodles With Avocado Pesto

Ingredients:

  1.  2 medium zucchinis (spiralized into noodles or sliced thinly)
  2. 1 ripe avocado
  3. 1/4 CUP fresh basil leaves
  4. 1 TBSP lemon juice
  5. 1 small garlic clove
  6. 2 TBSP extra virgin olive oil
  7. Salt and pepper, to taste
  8. 1/4 CUP pine nuts (or walnuts)
  9. Optional: Cherry tomatoes for garnish

Instructions:

  1. Use a spiralizer or a vegetable peeler to create zucchini noodles. If you don’t have a spiralizer, you can also slice the zucchini thinly into strips. Set aside.
  2. In a blender or food processor, combine ingredients. Blend until smooth, adding more olive oil if necessary to reach your desired pesto consistency. Season with salt and pepper to taste.
  3. Toss the zucchini noodles with the avocado pesto until well-coated.
  4. Garnish with cherry tomatoes, extra pine nuts, or fresh basil, if desired.
  5. Serve immediately and enjoy!
