Cauliflower Tabbouleh

INGREDIENTS: (All Organic)

  • 1/2 Large Cauliflower Head
  • 1.5 CUPS cherry tomatoes (sliced)
  • 1/2 CUP fresh parsley (minced)
  • 1/3 CUP fresh cilantro (minced)
  • 2 green onions (thinly sliced)
  • 3/4 CUP celery (chopped)
  • 2 TBSP hemp seeds
  • 1 Large Lemon (juiced & zested)
  • Himalayan Salt

PREPARATION:

  • Grate cauliflower using a cheese grater into a medium bowl.
  • Add the sliced tomatoes/green onion, minced parsley/cilantro, chopped celery and the hemp seeds, mixing all ingredients together.
  • Add lemon juice and salt, mixing until fully coated.
  • Top with lemon zest. Serve & enjoy.
