Raspberry Cheesecake Cookies

INGREDIENTS (All Organic):

  • 3 OZ Raspberries
  • 10 Drops Plain Liquid Stevia
  • 4 OZ plain grass fed cream cheese
  • 10 drops Plain Liquid Stevia
  • 1/2 TSP vanilla extract
  • 1 small egg
  • 1/4 CUP grass fed butter
  • 1 OZ plain grass fed cream cheese
  • 1 small egg
  • 1 TSP vanilla extract
  • 2.5 CUPS almond flour

PREPARATION:

  • Preheat oven to 350F.
  • Combine raspberries and 10 drops stevia in a blender and pulse until smooth. Gently simmer over medium heat to reduce to 1/3 volume, cool and set aside.
  • Combine 4 oz. cream cheese, 10 drops stevia, 1/2 tsp vanilla and 1 small egg and mix well in a small bowl
  • In another bowl combine 1/4 cup butter, 1oz cream cheese, 1small egg, 1 tsp vanilla and 2.5 cups almond flour until crumbled. Form a ball roughly 2tbsp in size, place on baking sheet and create a well with thumb or spoon.
  • Place some of the cream cheese mixture in the well and drizzle with raspberry sauce.-
  • Bake for 10-15 min or until the edges slightly brown then serve.
