Ingredients
Salad:
- 1/2 large cucumber
- handful of mixed bean sprouts
- 1 celery stalk
- 1/2 white cabbage
- sesame seeds
Dressing
- ½ bundle of coriander
- ½ clove of fresh garlic
- 1/4 in. fresh ginger skinless
- 2 tbsp lemon juice
- 2 tbsp extra avocado oil or grapeseed oil
- Salt and pepper
Directions
- Thinly slice cucumber, celery stick, and cabbage
- Place in bowl along with bean sprouts
- Blitz 1/4 bundle of coriander(save other half for garnish), garlic, ginger, oil and lemon juice and blitz in blender until the consistency is runny
- Pour dressing over bowl of vegetables and toss so that it is thoroughly coated. Sprinkle sesame seeds and 1/4 chopped coriander over salad and enjoy
