Ingredients
- 1 or 2 large organic zucchinis*
- 5 cup almond flour
- 1 free-range egg
- 1 tsp Himalayan pink salt + pepper to taste
- 3-4 tbsp Cajun spice
Instructions
- Preheat oven to 425°F
- Combine almond flour, spices, and salt in a bowl
- Beat egg in a separate bowl
- Slice zucchini into a fry shape
- Dip a few zucchini fries at a time in egg and coat them well in bowl with dry ingredients
- Place in a shallow, glass baking dish (or baking sheet if you have one)
- Bake for 20-30 minutes or until they get as crispy as you like!
*Double recipe ingredients if using 2 large zucchinis
