INGREDIENTS:
- 2/3 cup chopped spinach (frozen/thawed and drained or fresh, finely chopped)
- 3 eggs
- 1/2 cup raw cheddar cheese, shredded 1/4 cup chopped cilantro
- 1 tsp pink Himalayan salt
- 1 cup nutritional yeast
DIRECTIONS:
- Preheat oven to 350 degrees F
- Combine spinach, eggs, cheese, cilantro salt and nutritional yeast in a large mixing bowl
- Grease a baking pan with coconut oil
- Lightly coat hands with coconut oil, scoop out 1-2 tbsp of the “batter” at a time, rolling into balls and dropping onto the baking pan
- Bake for 20-25 min or until the poppers start to brown.
