INGREDIENTS:
3 cups cooked black beans
1 ½ cups red Quinoa, rinsed
1 red bell pepper
1 green bell pepper
2 Roma tomatoes, diced
1 medium red onion, minced
½ bunch fresh cilantro
1 jalapeno pepper (optional)
1 ripe avocado (optional)
Juice of 2 limes
1/3 cup olive oil
Salt & pepper
DIRECTIONS:
- Prepare ingredients by dicing the peppers, tomatoes and onion
- In a bowl, mix all ingredients together.
- Add lime juice, salt, avocado and jalapeno as desired.
- Cover and refrigerate for 30 minutes.
- Serve and enjoy!
- You can eat this salad with bell pepper halves as scoops if desired!
