Guiltless Grainless Bread

Fluffy and moist, this bread tastes amazing.  Very firm and holds up great.  Toast it, make a sandwich or eat it as is with your favorite healthy spread.  No toxic grains here so eat up!!



  • 1 1/4 cup organic almond flour
  • 1/4 cup + 2 tablespoons organic garbanzo bean flour
  • 1/4 cup ground golden flaxmeal (ground fresh flax seeds to meal)
  • 1 1/2 teaspoons non-aluminum baking soda
  • 1/4 teaspoon Celtic or Himalayan sea salt
  • 5 organic free-range eggs, separated
  • 1/4 cup melted organic grass-fed butter
  • 1 tablespoon amasai, plain organic full fat yogurt, or organic heavy cream
  • 4-6 drops of liquid stevia (optional)


  1. Preheat oven to 350.
  2. Grease a loaf pan with coconut oil.
  3. Using a coffee grinder, grind flax seeds to meal.
  4. In a food processor, combine almond flour, garbanzo bean flour, flax meal, baking soda and salt.
  5. Pulse until blended.
  6. Add egg yolks, butter, amasai or yogurt, and stevia (if using).
  7. Pulse until blended.
  8. Put egg whites into a large bowl and mix with an electric mixer until soft peaks form.
  9. Pour into the flour mixture in the food processor and pulse (do not run) until egg whites are blended in.
  10. Spread into the greased loaf pan.
  11. Bake 40 minutes, or until a toothpick comes out clean.
  12. Cool in the pan for 15 minutes and then continue to cool on a rack.
  13. Use sharp bread knife to slice.
