INGREDIENTS:
4 Tbsp raw unsalted butter
1 medium head cauliflower (cored/sliced 1/4 inch pieces)
1 large head broccoli (cored/sliced 1/4 inch pieces)
6 TBSP Gluten Free All-Purpose Flour
3 CUPS Full Fat Coconut Milk
1/4 TSP Grated Nutmeg
8 OZ Gruyere Cheese (Graded)
Himalayan Salt / Ground Black Pepper
DIRECTIONS:
Preheat Oven to 375. Butter a baking dish and arrange cauliflower and broccoli evenly.
Melt butter in large saucepan add flour and stir while whisking in coconut milk. Simmer while whisking occasionally until thickened (3-4 min)
Remove from heat, stir in nutmeg and 1 1/4 cups of cheese. Season with salt and pepper.
Pour mixture over the vegetables, cover with remaining cheese (3/4 cup).
Bake for 30-35 min, rotating every 10-15 min to prevent edges from burning. Remove and let rest 10-15 min before serving.
