INGREDIENTS: (All Organic)
- 1 Large Celery Root Bulb
- 1 Large Lemon, Juiced
- 1/3 CUP Coconut Cream
- 2 TBSP Grass Fed Butter
- Himalayan Salt
PREPARATION:
- Peel then chop the celery root into small pieces and place in a pot of water with 1/2 lemon juice.
- Bring to a boil then simmer for 10-15min until tender. Drain.
- Transfer celery root to food processor, pulse after adding coconut cream, grass fed butter and 1/2 lemon juice.
- Run on full speed until smooth and creamy. Salt to taste before plating.
Celery root is a perfect substitute for mashed potatoes and can be used as a base for salmon or steaks.
