Here’s one of my favorite, sweet-tooth satisfying desert that won’t wreck your new AskDrErnst healthy habits. NOTE: When consuming deserts, remember to keep them within your feasting period. This is not something to have when fasting (before 12 noon or after 8pm).
Dark Chocolate Cake
- 1 1/2 cup ground almond flour
- 1 tsp powered stevia (6-8 drops liquid stevia)
- 1/3 cup raw cocoa powder
- 1/2 tsp celtic sea salt
- 1 tsp aluminum free baking soda
- 1 tbps apple cider vinegar
- 1 tsp vanilla extract
- 1/3 cup melted coconut oil
- splash of coconut water
Thoroughly mix all ingredients and place into a 8×8″ baking pan. Bake for 20 min @ 350F or until a fork/knife comes out clean. Cool before cutting.
Vanilla Cream
- 1 cup almond flour
- 1/4 tsp powered stevia (2-4 drops liquid stevia)
- 6 tbsp full fat coconut milk
- 1 tsp vanilla extract
Use a hand mixer to cream all ingredients thoroughly.
Assembly
- Berries (blackberry, blueberry, strawberry etc)
- Raw Cocoa Nibs
Cut the chocolate cake into desired shapes (small squares or circles) and place into a glass cup. Add dollops of vanilla cream then and various berries (blackberry, blueberry, strawberry) for perfect layered presentation. Garnish with Raw Cocoa Nibs if desired.
