Gluten Free Oat Flour Pancakes

INGREDIENTS:

  • 1 1/3 Cup Gluten Free Organic Oats
  • 1 Cup Unsweetened Almond Milk
  • 1 TSP vanilla extract
  • 1 TBSP Lakanto Keto Maple Syrup
  • 1 Egg
  • 1/4 TSP Aluminum Free Baking Powder
  • 1/4 TSP Himalayan Salt
  • Coconut Oil (For Cooking)

DIRECTIONS:

  • Pulse the oats in a food processor until 1 cup of oat flour is formed
  • Add the dry ingredients (baking powder and Himalayan salt)
  • Add the wet ingredients (almond milk, vanilla extract, keto syrup & 1 egg)
  • Mix well until a batter is formed.\
  • Heat a cast iron griddle seasoned with coconut oil (or any oiled pan) and cook each side until golden brown
  • Serve drizzled with a small amount of Lakanto syrup
  • Top with grass fed butter, compote, coconut flakes and/or your favorite chipped nuts.
