If you’re looking for a replacement to that great side dish mashed potatoes used to be before you decided to limit the starch and carbs that come with mashed potatoes, look no further. Cauliflower provides a delicious and effective, much less carb-y, alternative to a lot of things. In this case… mashed potatoes. Enjoy!
- 1 medium head fresh cauliflower, about 1.5 lbs.
- 1/4 cup organic or raw butter
- 1/4 cup organic or raw half and half, or crème fraiche.
- 3/4 tsp sea salt
- Black pepper to taste
- Minced chives (optional)
Steam cauliflower in steamer basket or small amount of water in saucepan until tender and drain.
In food processor, blend cauliflower, butter, cream, sea salt and pepper until smooth.
Transfer to a serving bowl and eat immediately.
