Fun and family- friendly; these tots are a great addition to any meal or just as a snack anytime.
Ingredients :
- 5 C raw broccoli florets
- 3 C raw cauliflower, stems removed
- 1 large egg
- 1/2 C almond meal
- 1/2 C grated parmesan
- 2 T ea. – parsley and basil
- 1/2 C green onion finely diced
- 1/4 t Himalayan or Sea salt
- 1/4 t garlic powder
- 1/8 t black pepper
Directions:
Add the broccoli florets and cauliflower into a pot and steam until fully tender, about 8-10 minutes.
Remove from heat and allow to cool to touch
Chop the broccoli and cauliflower very finely
In a large bowl combine all the ingredients
With 1 T of the mixture, gently press between in your palms to form a ball
You can shape like a tater-tot by pinching together both ends with your fingers
Place the tots onto a buttered baking sheet, with a little space between so they don’t stick together
Bake at 400 degrees F until golden brown and crispy – about 18-24 minutes
Make sure to stir them up half way through baking.
