Those reading this might (we hope!) be all over the world, but we are in the South where biscuits is serious business. So let’s not let a big part of our culture down; let’s just do it the healthy way!
Ingredients:
- 4 pasture-raised eggs
- 1/4 cup coconut oil
- 1/4 tsp sea salt
- 1/4 tsp onion powder
- 1/3 cup sifted coconut flour
- 1/4 tsp baking powder
- 1/4 cup Parmesan cheese
- 1/3 cup raw sharp cheddar cheese or gruyere, grated
- garlic & herb seasoning
Directions:
Mix together eggs, oil, salt and onion powder
Mix together coconut flour and baking powder separately.
Mix in your coconut flour/baking powder with the eggs, oil, salt and onion powder.
Fold in the cheese.
Drop batter onto a cookie sheet greased with coconut oil.
Sprinkle the tops of the uncooked biscuits with garlic & herb seasoning.
Bake at 400 degrees for 12-15 minutes.
Makes roughly 10 biscuits.
