Grilled Carrot Arugula Salad

INGREDIENTS:

5 Large Carrots (vertically cut)

1 TBSP Avocado Oil

Himalayan Salt / Pepper

Baby Arugula

Dried Figs (Halved)

1/3 Cup Goat Cheese (crumbled)

1 Avocado (Sliced)

Nuts / Seeds (Optional topping)

DIRECTIONS:

Preheat grill to 400F

Toss vertically cut carrots in avocado oil and lightly season with a pinch of salt/pepper.

Grill for 15-20 min until tender, flipping at 7-10 min.

Add arugula etc a large platter, then layer with toppings: Grilled Carrots Dried Fig Halves Goat cheese Avocado Slices Nuts/Seeds

Drizzle with tahini dressing (See Recipe on askdrernst.com ) or use any favorite dressing (we recommend Primal Kitchen Dressings)

4 Portions as main dish, 6 portions if side dish.
