- 1 yellow onion
- 12 ounce arugala
- 8 slices turkey bacon cooked and chopped
- salt and pepper
- 2 tbsp coconut oil or butter
- ½ cup shredded raw cheese
Cook turkey bacon according to instructions on package. In medium skillet over medium heat melt oil or butter. Add onion and cook for 5 minutes, reduce heat and add 2 tbsp water. Cover skillet and cook for another 15 minutes until onions are deep brown in color.
Remove onions from skillet. In same skillet, add coconut oil or butter and heat under medium heat. Add arugala and sautee for 1-2 minutes or until tender. Remove from heat and place on a plate. Top with bacon, onions, and cheese.
