Ingredients:
- 1 large yucca root
- Avocado oil for frying
- Himalayan Salt to taste
- Optional: additional seasonings such as garlic powder, paprika, or dried herbs for extra flavor
Instructions:
- Prepare the Yucca: Peel the yucca root and cut it into thin strips resembling fries. Make sure to remove any tough, fibrous core from the center.
- Boil the Yucca: Place yucca strips in a pot of boiling water for 10-15 min, or until they appear to have expanded in size slightly.
- Preheat the Oil: In a deep fryer or a large, stainless steell pot, heat the avocado oil to 350°F (175°C). You’ll want enough oil to fully submerge the yucca fries.
- Fry the Yucca: Carefully add the yucca fries to the hot oil in batches, making sure not to overcrowd the fryer or pot. Fry them for about 5-7 minutes, or until they are golden brown and crispy.
- Drain and Season: Once the yucca fries are cooked to your desired crispiness, remove them from the oil using a slotted spoon or tongs and transfer them to a plate lined with paper towels to drain excess oil. Immediately sprinkle with himalayan salt and any additional seasonings while they are still hot.
- Serve: Serve the yucca fries hot as a side dish or snack. They pair well with a dipping sauce such as aioli, sugar free ketchup, or a spicy mayo (simply mix avocado mayo with Frank’s Hot or any other cayenne pepper sauce.
