Spinach Pie

This is an amazing recipe–it’s so simple but when presented, it looks like something only an expert could pull off. The best part? It’s incredibly healthy and a great source of both macro and micronutrients. The eggs and cheese are full of healthy fats and proteins and the spinach is loaded with Vitamin C, Vitamin B, Fiber and so much more. Enjoy!


  • 3 free range eggs, beaten
  • 16 oz carton of full-fat, organic cottage cheese
  • 10 oz. box of chopped frozen organic spinach – defrost and squeeze out the water
  • 3 Tbsp. of coconut flour
  • 6-8 sliced mushrooms
  • 1/4 cup of melted raw butter
  • Salt and pepper to taste


  • Preheat oven to 325 F
  • Lightly grease a 9-inch deep dish pie pan with butter
  • Combine all ingredients
  • Pour mixture into pie pan
  • Place a cookie tray under the pie pan to catch any drips
  • Bake for 1 hour – 1 hour and 10 minutes
