Spinach & Cheese Poppers

  • 2/3 cup chopped spinach (frozen/thawed 
 and drained or fresh, finely chopped)
  • 3 eggs
  • 1/2 cup raw cheddar cheese, shredded 1/4 cup chopped cilantro
  • 1 tsp pink Himalayan salt
  • 1 cup nutritional yeast


  1. Preheat oven to 350 degrees F
  2. Combine spinach, eggs, cheese, cilantro salt and nutritional yeast in a large mixing bowl
  3. Grease a baking pan with coconut oil
  4. Lightly coat hands with coconut oil, scoop out 1-2 tbsp of the “batter” at a time, rolling into balls and dropping onto the baking pan
  5. Bake for 20-25 min or until the poppers start to brown.

Protein Content: ~14g
Net Carbohydrate Content: ~2g (Total Cabs – Fiber)
